"Salads made with greens and other nonstarchy veggies, such as tomatoes, mushrooms, onion, and sweet peppers, are a great way to fill up on fiber, vitamins, and minerals without adding too many calories to a meal. People who use simple carb counting to control diabetes usually don't need to count a nonstarchy salad--but do count any extra calories from salad dressing, cheese, croutons, and other add-ons."
